Spinach Kootu

Equipment

  • Pressure Cooker (optional)
  • Blender

Ingredients

  • 1 cup moong dal (split & skinned green gram)
  • 3 cups water
  • 8 oz bag frozen spinach
  • 1/2 tsp turmeric powder
  • 1/2 cup grated coconut (fresh or frozen)
  • 1 tbsp cumin powder
  • Salt to taste
  • 1 tbsp oil (coconut oil or any other)
  • 1 tsp mustard seeds
  • 1 tbsp udad dal (split black gram)
  • 1 tsp cumin seeds
  • 2 red chillies (optional)

Instructions

  • Wash the moong dal. Add water & turmeric to it. Pressure cook or cook on the stove till it turns soft.
  • Transfer the frozen spinach to a glass bowl. Place in the microwave and thaw for 5 to 8 mins, till the leaves are soft.
  • Mix the dal & the spinach in a pot. Add salt. If using fresh coconut, blend the coconut, cumin powder and the red chillies (optional) in a blender using a little water. Add this paste to the pot. Mix well. Cook for a few minutes.
  • If using frozen coconut, thaw the coconut for a minute and add to the pot. Add the cumin powder and mix well. Cook till the powder's flavor is well absorbed.
  • Heat a tbsp of oil. Add the udad dal, mustard seeds and cumin seeds. Red chillies are optional. When done, pour the seasoning on to the dal and mix well. Serve with rice or chapatis. Enjoy!
