This is a barfi (fudge-like consistency) made from ricotta cheese

Equipment
- 1 large microwaveable bowl
- 1 large wooden spoon for mixing
Ingredients
- 1 jar Ricotta cheese (32 oz)
- 1.5 jars instant non-fat milk powder (use the same 32 oz jar)
- ¾ jar sugar (use the same 32 oz jar)
- 1 stick unsalted butter (4 oz)
- 1 tspn cardamom powder
Instructions
- Slightly melt the butter for about 20 seconds. Mix all the ingredients in a large microwaveable bowl. No need for a thorough mix.
- Microwave for 3 mins, take out the bowl, mix the contents and put it back in the microwave for another 3 mins.
- Repeat the above step about 7-8 times (depends on your microwave). The mixture will turn pale yellow and will have a crumbly look.
- Mix in a little cardamom powder and plenty of love 😊! Pour into a large steel plate (or two smaller steel plates) greased with ghee or butter.
- When the mixture cools a little, cut into squares. After some time you can separate the squares (about 50-60 pieces).
